So why don't you just ship OCs if that is what you want to do. This isn't AU shit, and it isn't "the basis for most AUs". Most AUs (especially any sort of decent AU) take the same or very slightly modified characters and put them in an alternate situation to see how they react or change in that situation. What is being described here isn't that, it's taking and completely changing a character in the same situation.
AU means Alternate Universe, not Alternate Character.
And even beyond that, the logic in this specific case is outright wrong, because without Summer and Ruby, Yang would just be the daughter of single dad with a loving uncle (both of whom would be entirely focused on her), with no sudden loss of mother figure so she'd end up more pampered and loved than before.
If you want to ship a crackship, then do it. Why do you need to develop some bizarre headcanon that is the exact opposite of reality to justify the ship to other people? Am I really supposed to believe that the reason someone things Yang x Emerald is a good ship, is because in another world where Yang isn't Yang at all and she had the same experiences as Emerald, she might be like Emerald? Well, no shit. If Zwei or Oobleck or Hazel or the waitress from the tavern in V4 were not themselves and had had similar experiences to Emerald, they might have turned out like Emerald too.
